Cumin- why did ancient Egyptians love it


Cumin or "jeera" is a small brown seed of an annual plant in the parsley family. The health benefits of this tiny seed are many in number. It aids in digestion, helps with insomnia, common cold, skin disorders, lactation, improves immunity and respiratory disorders and assists in general wellbeing. Cumin is rich in iron so may help manage anemia.

Simple recipe to jazz up steamed rice

INGREDIENTS

3-4 cups cooked brown or white rice

1 table spoon butter

3 tablespoons olive oil

1 small onion sliced

1 handful almond flakes

1/2 tsp cumin seeds

METHOD

1. Heat butter and olive oil in a small saucepan.

2. Add sliced onions and allow onions to caramelise until golden brown.

3. Add cumin and allow it to fry for about 20 seconds.

4. Add almond flakes and fry gently until flakes are lightly toasted.

5. Add to rice, mix through and garnish with fresh chopped coriander and enjoy with curry of your choice, and fresh garden salad.
